They're active year-round but really turn on during cooler months when they're feeding up. What sets them apart is their bulldogging fight - once hooked, they'll try to drag you straight down into the rocks. The payoff is some of the best eating you'll find, with firm, white, flaky meat. They're ambush predators that love live pinfish and mullet, but cut crab works great too. My advice: lock that drag down tight and keep your rod tip low when you hook up. Don't give them any slack or they'll disappear into a hole you'll never get them out of.
